Oatmeal Date Cookies


2 c. quick oats

1 c. fine whole wheat flour

1 tsp. baking powder

1/2 tsp. sea salt

1/2 c. canola oil

3/4 c. pure maple syrup

2 tsp. vanilla

1/4 c. chopped dates

1/2 c. pecan pieces

1/2 c. coconut

1/4 c. Craisins

1/4 c. water

In a medium bowl, mix all the dry ingredients together. Make a well in the center and add all the rest of the ingredients. Stir until well blended. Place about 1/4 cup of dough per cookie on an oil-sprayed baking sheet, and lightly press them into a rounded shape. Bake at 400 degrees for 10 – 12 minutes, or until golden brown. Carefully remove from tray and place on cooling rack.
