Macadamia Almond Nut Paste (like a soft brie)
1 c. almonds, soaked for 4 hours
1 c. macadamias, soaked for 4 hours
1 c. water
2 Tbsp. tahini
3/4 tsp. salt
1/2 c. nutritional yeast
2 Tbsp. lemon juice
1 tsp. maple syrup
Blend almonds and macadamias in blender (Vita Mixer if available) until it is a smooth and creamy as possible. Remove from blender and place in cheese cloth, inside a strainer and then place the strainer inside another container. You will need to put something heavy on top so that the fluid can drain from the paste and then place this in the refrigerator overnight.
The next day, combine the remainder of the ingredients to the paste and mix well. After mixing, place the paste in cheese cloth again but this time in a small spring form pan and return to the refrigerator overnight. It does not have to be a spring form pan but can be any shape you wish.
When the paste is removed from the refrigerator that second time, place the formed paste onto a plate, decorate and serve with crackers or bread. This nut paste will be more like a soft brie. If you wish to have something much firmer, then the paste can be dehydrated.
