Peanut Curry Sauce

Peanut Curry Sauce
 
2 cups of Coconut milk (Chaokoh is the best)

1 ½ cup of unsweetened peanut butter

½ Container of Yellow Curry Powder (the little spice containers like you would see for salt shakers)

4 Tablespoons of Cayenne Pepper

1 tablespoon salt

1 ½ Cups of Sugar

4 Tablespoons of Apple Cider Vinegar

1 Cup of Water
 
Sauce Thickener

½ cup of water

½ cup of flour
 
Directions:
Mix all ingredients into a Sauce Pan and place stove on medium-high heat. Bring ingredients to a low, rolling boil. Bring down to low heat and taste the sauce (depending on the spice or sweetness add more curry power/cayenne powder or more sugar). Once sauce is warm mix the sauce thickener and stir until mixture is without lumps. Then bring the sauce to medium heat and add the Sauce Thickener. Keep on a medium to low heat for another 5 minutes then serve warm over rice, chicken and vegetables.
